1 ½ cups of diced carrots

2 cloves of minced garlic

1 cup of diced onion

¼ cup of olive oil

4 cups of vegetable or chicken broth

1 can of pinto beans

1 teaspoon of dried oregano

2 teaspoons of fresh thyme leaves (or one teaspoon of dried thyme)

8 ounces of cooked small pasta shells (Uncooked will work too!)

2 cans (14.5 ounce) diced tomatoes with juice

Parmesan cheese, optional topping.

Salt and pepper to taste

Directions on how to make your Busy Day Soup

Heat the olive oil in a large pot over medium heat. Add the garlic, onion and carrots and cook until softened (about 5 minutes).

Add the broth, pinto beans, oregano, thyme, pasta, tomatoes and juice, salt and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes, depending on the size of your pasta.

Taste and add additional seasoning if needed. Top with (optional) parmesan cheese. Serve hot!  Enjoy!
