How to Properly Clean a Professional Griddle

A professional griddle is a flat-top grill that is most commonly found in commercial kitchens and is the kind that can be transported to outdoor events that are on wheels.

They are easy to operate and maintain, which makes them a popular choice for chefs and home cooks who like to entertain.

When it comes to cleaning a professional griddle, there are a few things you need to keep in mind in order to do it properly. In this blog post, we will go over how to clean a professional griddle step-by-step so that you can keep your kitchen running smoothly.

Cleaning a Blackstone griddle is not as hard as you might think

The following instructions apply to all of the Blackstone griddles, as well as other similar griddles. We do not use any harsh cleaners on our grill. In fact, it may surprise you, but it is not necessary to use much of any cleaner at all since you are cleaning with the heat on.

Also, this surface touches all of your food, you do not want to use chemicals on your grill to clean it, as there will be traces of it left, and that will be cooked into your next meal.  No thank-you!

This is the Blackstone griddle that we use the following cleaning instructions on to keep it looking great!

Step 1: Pre-Heat the Griddle

The first step to properly cleaning your professional griddle is to pre-heat it. This helps loosen up any debris that may be stuck on the surface of the griddle. Simply turn on the griddle to its highest setting and let it heat up for about 10 minutes. Once the griddle is pre-heated, you can begin the cleaning process.

Step 2: Scrape Off Food Debris

Next, use a metal scraper to scrape off any debris that is stuck on the surface of the griddle. Be sure to scrape in both directions (lengthwise and widthwise) so that you don’t miss any spots.

Do not aggressively scrape this grill. It is not the type of commercial-level stainless steel model like in a commercial kitchen where it can withstand hard scraping. Nor is hard scraping necessary. You don’t want groves or scratches in your grilltop. A regular scraping effort is more than sufficient. Choose a scraper that is sharp so that it works with minimal effort.

Having the right tools makes all the difference. When we refer to a scraper, we mean this kind of wide and sturdy scraper:

As you scrape, the debris will collect in front of the path of the scraper. Once you have scraped off all of the debris and put it into the catch, you can move on to Step 3.

Step 3-Apply water

Apply water in a squeezy condiment bottle, and use the scraper to help loosen any further sticky sauce or food remnants. All of the water and food debris go into the catch container.

Optional Step 4 – Use baking soda or vinegar to cut through additional grease

If you feel the heat and water approach are not enough, and you want to deep clean your Blackstone griddle, you can use baking soda to mix with the water. Turn the heat down while you do this. Use a huck towel and some pressure to work the baking soda in to do its magic.

Vinegar can be used cut through any remaining grease, but not with the baking soda. Choose one or the other. This is usually not necessary, though.

Remember, you want to leave your grill seasoned well, which means when it is clean, it still has a bit of an oily trace on the surface. This is called a “seasoned grill.”

Seasoning is what makes the difference between a “seasoned cook” and one who is not so experienced. Perhaps this is where that name came from to describe a good cook?

Step 5-Wipe down the grill

Turn the heat down or off, and use a paper towel or a cotton kitchen towel to wipe the grill down. We like to use huck towels. Huck towels are thin and absorbent and made from 100% cotton. They are similar to the ones mechanics use in their machine shop, and we use them specifically for tougher jobs like grill wiping.

Huck towels are highly absorbent and they reduce the use of disposable paper towels, which the environment will thank you for and so will your wallet. We have almost fully replaced paper towels in our kitchen with huck towels. Simply toss them into the laundry when you are done. Keep them separate in their own laundry bag and launder all of your hand towels together a couple times a week.

These are the ones we use. The 25 huck towels come in one order and they are very reasonably priced. Think about how much you can save when you stop buying paper towels!
